What Is Malossol?

Malossol is a Russian term commonly translated as “little salt.” In caviar, it describes a restrained approach to seasoning rather than a species, origin or grade.

Malossol generally refers to caviar prepared with a relatively light touch of salt. The purpose is to season and preserve while allowing the caviar's own texture and character to remain present.
