Keep the caviar in its original sealed tin, refrigerated and well chilled. Always follow the storage, date and care directions supplied with each tin.
At the table
Prepare the serving setting first, open the tin only when the table is ready and rest the original tin over ice. Serve with a mother-of-pearl or other non-metallic spoon.
After opening
Refrigerate any remainder immediately and follow the directions on the tin. For the best texture and freshness, enjoy it promptly; if temperature control is uncertain, do not keep it.
